One Pot Creamy Tomato Chicken

Ingredients:


1 Pound of Chicken Breasts (I honestly used like 1.25)
Salt, Pepper, Garlic Powder, Onion Powder to taste
Spray Olive Oil
2 Tsp Minced Garlic
1/2 Cup Diced Cherry Tomatoes
4 Cups of Fresh Spinach
3/4 Cup of Half & Half
1/4 Cup of Grated Parmesan Cheese
1 Chopped Zucchini
Fresh Parsley

Instructions:

1. Season the chicken to taste
2. Spray your pan with oil and cook the chicken. I prefer to pan sear it, but you could use the air fryer!
3. Remove the chicken. Spray the pan again and add in minced garlic. Brown the garlic and add the diced tomatoes and Zucchini. Cook for about 4 minutes in pan until the veggies are softened.
4. Add the spinach to the pan, and allow to cook down.
5. Turn heat on the stove to low, add half & half, parmesan, and seasonings. Mix together and simmer mixture on low.
6. Once the sauce is your desired consistency and the cheese has all melted, add the chicken to the mixture cover in sauce.

Notes:

Servings: 4

I used Fat Free Half and Half
