Berry Jam

INGREDIENTS:

2 Cups of Fresh or Frozen Berries

1 Tbsp of Lemon Juice

1 Tbsp of Cornstarch

1/2 Tbsp of Vanilla Extract

2 Tbsp of Sweetener (Honey, White Sugar, or Monkfruit Sweetener)

INSTRUCTIONS:

  1. Combine the berries, honey, and vanilla in a small sauce pans.
  2. Bring the mixture to a boil & mash the berries to achieve a smoother consistency.
  3. Bring to a simmer for 5 minutes.
  4. Add in lemon juice and cornstarch, let simmer for an additional 5 minutes.
  5. Serve or store in an airtight container.
